The goop is produced by Effetto mariposa, whose owner, Alberto de Gioannini, told us that Caffélatex offers two advantages: it doesn't use ammonia, unlike several other leading sealants., so he says, "it's less chemically reactive and will not attack the tire or corrode aluminum rims."
